This will out me as an Old Fart, but the best dinosaur documentary of my childhood was, hands down, Dinosaur! (1985) There's a lot of familiar faces in the interviews, all looking considerably younger, and some wonderful stop-motion animated bits.

The stop-motion animated dinosaurs were created by Phil Tippett (the "You had one job, Phil!" Dinosaur Supervisor of Jurassic Park - as you probably know, the dinosaurs weren't originally going to be made with CGI). Tippett's origial project was a ten minute nature documentary style short, Prehistoric Beast. Although you could take issue with the too-mammalian noises the dinos make, some of the anatomy and the lack of feathers (which of course was the standard 30 years ago), the dinos are all definitely active critters and the film is atmospheric and dramatic, and surprisingly lovely especially considering he made it in his garage!
